Thousand Island-style dressing

    Make the dressing

    In a small bowl combine mayonnaise, ketchup, sweet pickle relish, white wine vinegar, paprika and black pepper. Stir until smooth and well combined. Taste and adjust seasoning; set aside.

    Prepare bread

    Spread about 1 teaspoon of softened butter on one side of each slice of rye bread (8 slices). These will be the exterior sides that get toasted in the pan.

    Assemble sandwiches

    Place four slices of bread buttered-side down on a work surface. On each slice, spread about 1 tablespoon of the prepared dressing. Top each with 3 ounces (approx.) of thinly sliced corned beef, then 2 slices of Swiss cheese, and 2 dill pickle slices. If using, add about 2 tablespoons of drained sauerkraut or 2 tablespoons of coleslaw on top of the cheese before closing. Finish each sandwich by placing a second slice of bread on top, buttered-side up.

    Grill the sandwiches

    Heat a large skillet or griddle over medium heat. When hot, place the assembled sandwiches in the skillet (work in batches if needed). Cook 3–4 minutes on the first side without pressing, until golden brown and the cheese begins to melt. Flip the sandwiches carefully and cook another 3–4 minutes until the second side is golden and the cheese is fully melted. If the bread is browning too quickly before the cheese melts, reduce heat to medium-low and cover the pan loosely with a lid for 1–2 minutes to help the cheese melt through.

    Rest and serve

    Remove sandwiches from the skillet and let rest 1 minute. Cut each sandwich in half on the diagonal and serve immediately. Offer extra dressing and dill pickles on the side.
