Prepare bacon
Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top. Arrange 8 slices of thick-sliced bacon in a single layer on the rack. Bake 15–20 minutes, rotating the pan once halfway, until bacon is crisp and deep golden. Remove from oven and transfer bacon to a plate lined with paper towels to drain. Reserve 1 teaspoon of bacon fat for toasting bread if desired.

Toast bread
Spread 1 tablespoon unsalted butter evenly on one side of each of the 4 bread slices. Heat a skillet over medium heat. Toast buttered sides down 2–3 minutes per side until golden and crisp, or use a toaster and then butter the hot slices. If you reserved bacon fat, you may brush the outer sides of the bread with that for extra flavor before toasting (count it as part of the butter).

Prepare tomato and lettuce
Wash and dry 4 lettuce leaves. Core the large tomato and slice into 1/4-inch thick rounds (about 4–6 slices depending on tomato). Lay tomato slices on a plate and sprinkle with 1 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper; let sit 2 minutes to draw out juices.

Assemble mayonnaise layer
Spread about 3/4 tbs mayonnaise on the inside of each toasted bread slice (3 tablespoons total). If you like a tangier spread, mix 3 tbs mayonnaise with a pinch of black pepper and a light squeeze of lemon (optional).

Assemble sandwich
On two bread slices (mayo side up), layer as follows: 2 lettuce leaves per slice, 3–4 tomato slices per slice (seasoned side up), and 4 slices of cooked bacon per slice. If using optional ingredients, add about 1/4 cup mashed or sliced avocado to each assembled side and/or 2 dill pickle slices. Top with remaining bread slices, mayo side down.

Serve
Press sandwiches gently to compact, cut each sandwich in half diagonally with a sharp knife. Serve immediately while bacon is warm and bread is crisp. Provide extra salt and pepper to taste.
