Combine raspberries, sugar, and water in a small saucepan over medium heat.

Bring to a gentle simmer, stirring occasionally to dissolve sugar. Let simmer for 5–7 minutes until raspberries break down and liquid is fragrant and slightly thickened.

Remove from heat and mash the raspberry mixture with a fork or a potato masher to extract more juice.

Pour the mixture through a fine-mesh strainer into a heatproof bowl or jar, pressing solids with the back of a spoon to extract as much syrup as possible. Discard solids (or reserve for another use).

Stir in 1 tablespoon fresh lemon juice to brighten flavor. Let cool to room temperature, then refrigerate until chilled. Makes roughly 1 to 1 1/4 cups syrup.

Prepare glass
Fill a highball or Collins glass with ice cubes (about 1 cup).

Add 2 oz vodka (omit to make a mocktail), 3/4 oz fresh lemon juice and 1 oz raspberry simple syrup into the glass.

Stir gently to combine the spirits and syrup with the ice and lemon juice.

Top with 3 oz ginger beer (or ginger ale). Stir once gently to incorporate without losing carbonation.

Garnish with 3–4 fresh raspberries, a lemon wheel or wedge on the rim and an optional mint sprig tucked into the drink.

Taste and adjust sweetness or tartness: add up to 0.5 oz more syrup for sweetness or 0.25 oz more lemon juice for brightness. Serve immediately.
