Measure and rinse
Measure 1 cup steel-cut oats. Optionally rinse oats briefly in a fine mesh sieve under cold water to remove dust; drain well.

Boil water
In a medium heavy-bottomed saucepan, bring 4 cups water to a vigorous boil over medium-high heat.

Add oats and salt
Stir in the rinsed steel-cut oats and 1 teaspoon fine sea salt. Return to a gentle boil.

Simmer, stirring occasionally
Reduce heat to low so the oats maintain a steady gentle simmer. Cook, uncovered, stirring every 3–5 minutes to prevent sticking, for 18–25 minutes until oats are tender but still have a chewy texture. For creamier oats cook up to 30 minutes, adding small splashes of water as needed.

Rest
Let the oatmeal sit, covered or partially covered, off the heat for 2–3 minutes to thicken and allow flavors to meld.

Sweeten
Stir in 2 tablespoons brown sugar or 2 tablespoons maple syrup, or leave unsweetened. Adjust sweetness to taste.

Add butter and spices
Stir in 1 tablespoon butter and 1/4 teaspoon ground cinnamon, if using, until butter melts and is incorporated.

Serve immediately while hot. Leftovers can be refrigerated in an airtight container for up to 4 days and reheated with a splash of milk or water to loosen.
