Prepare and cook fries
Preheat oven to 425°F (220°C) if baking. If deep-frying, heat oil in a heavy pot to 350°F (175°C). Spread 1/2 lb frozen fries on a rimmed baking sheet in a single layer and toss with 2 tablespoons oil, 1/2 teaspoon salt and 1/4 teaspoon black pepper. For oven: bake 18–25 minutes, turning once halfway, until golden and crisp. For frying: fry in batches 3–5 minutes until golden and crisp; drain on paper towels and season lightly with a pinch more salt while hot.

Prepare toppings
While fries cook, crisp 2 strips bacon in a skillet over medium heat, about 6–8 minutes, turning occasionally; transfer to paper towels and crumble when cool. Shred 3/4 cup sharp cheddar if not pre-shredded. Thinly slice green onions (reserve some white and most green for garnish). If using jalapeño, slice thinly and remove seeds for less heat.

Assemble loaded fries
When fries are hot and on the baking sheet or serving plate, evenly sprinkle the shredded cheddar over the fries. Place under a broiler for 1–2 minutes or return to the oven at 425°F for 2–3 minutes until cheese is melted and bubbly. If frying, immediately top hot fries with cheese so it melts from residual heat; for faster melting, cover briefly with a large bowl for 30–60 seconds. Scatter crumbled bacon over the melted cheese, then sprinkle sliced green onions.

Finish and serve
Spoon 3 tablespoons of sour cream in dollops across the top (or serve on the side). Add optional jalapeño slices and chopped parsley if desired. Serve immediately while hot.
