Prepare potatoes (if using fresh)
If using fresh russets, peel (optional) and cut potatoes into 1/4–1/2-inch fries. Rinse in cold water until water runs clear to remove surface starch.

Soak and dry
Soak cut fries in cold water for at least 30 minutes (or up to 2 hours) to remove excess starch. Drain and pat completely dry with kitchen towels or paper towels.

Cook fries
Choose one cooking method: - Deep-fry: Heat oil in a deep pot to 325°F (160°C). Fry potatoes in batches 3–4 minutes until pale and slightly tender. Remove and drain on paper towels. Increase oil to 375°F (190°C) and fry again in batches 2–3 minutes until golden and crisp. Drain and season immediately with kosher salt and black pepper. - Oven-bake: Toss dried fries with 2 tbsp oil, spread in a single layer on a baking sheet, bake at 425°F (220°C) for 25–35 minutes, turning once, until crisp and golden. Season with kosher salt and black pepper. - Air-fryer: Toss dried fries with 1–2 tsp oil, cook at 400°F (200°C) in a single layer for 15–20 minutes, shaking basket occasionally, until crisp. Season with salt and pepper.

Cook bacon
While fries are finishing, cook bacon until crisp. Options: pan-fry over medium heat 8–10 minutes, bake on a sheet at 400°F (200°C) for 15–20 minutes, or microwave between paper towels until crisp. Drain on paper towels and crumble or chop into bite-sized pieces.

Assemble and melt cheese
Arrange hot fries on an oven-safe platter or baking sheet. Scatter shredded cheddar evenly over fries, followed by crumbled bacon. Place under a preheated broiler for 1–3 minutes (watch closely) or return to a 375°F (190°C) oven for 3–5 minutes until cheese is melted and bubbly.

Season and garnish
Remove loaded fries from oven. Sprinkle smoked paprika and garlic powder evenly if using. Scatter sliced green onions over the top. Dollop sour cream in several places or add as a central spoonful. Drizzle hot sauce over sour cream if desired and finish with chopped chives for extra color.
