Method

Brew the tea

    Heat water

    Bring 900 ml (about 3 3/4 cups) of water to just below boiling, about 75–80°C (hot but not boiling). If you don’t have a thermometer, remove from heat when small bubbles begin to form and steam rises.

    Steep

    Place 6 teaspoons loose green tea (or 6 tea bags) into a heatproof pitcher or teapot. Pour the hot water over the tea. Steep for 2 to 3 minutes for a bright, non-bitter brew. Do not over-steep — longer steeping makes the tea bitter.

    Strain

    Strain out the leaves (or remove tea bags) immediately after steeping to stop extraction. Allow the concentrated tea to cool at room temperature for 10–15 minutes.

Sweeten (optional)

    If you want sweetened iced tea, dissolve 2 tablespoons sugar (or substitute honey/simple syrup) in 30 ml hot water to make a quick syrup. Stir until fully dissolved. Add the syrup to the warm brewed tea and mix well so it integrates evenly.

Dilute & Chill

    Add 600 ml cold water to the brewed tea to dilute to serving strength and to cool it further. Stir and then refrigerate the pitcher for at least 30 minutes, or place in an ice bath to speed cooling.

Serve

    Fill glasses with ice (about 1/2 cup to 1 cup ice per glass). Pour the chilled green tea over the ice. Add a slice of lemon or lime to each glass and garnish with 1–2 mint leaves if desired. Taste and adjust sweetness by stirring in more simple syrup if needed.

    Serve immediately. Keeps refrigerated in a sealed pitcher for up to 48 hours; flavor is best within 24 hours.
