Burger

    Form Patties

    Divide the 1 lb ground beef into two equal portions (about 8 oz each). Gently form each portion into a patty about 3/4-1 inch thick and slightly wider than the bun. Do not overwork the meat. Make a shallow dimple in the center of each patty with your thumb to reduce puffing while cooking.

    Season both sides of each patty with kosher salt and freshly ground black pepper immediately before cooking.

    Cook Patties (stovetop)

    Heat a heavy skillet or cast-iron pan over medium-high heat until very hot, about 3 minutes. Add 1 tsp vegetable oil and swirl to coat. Place patties in the pan and cook for 3-4 minutes on the first side without moving (for medium: internal temp ~140-145°F). Flip once and cook 3-4 minutes on the second side. If adding cheese, place a slice on each patty in the last 1 minute of cooking and cover the pan to melt.

    Alternate Cook (grill)

    Preheat grill to medium-high. Grill patties 3-4 minutes per side for medium, adding cheese during the last minute and closing the lid to melt.

    After cooking, transfer patties to a plate and rest 3 minutes to allow juices to redistribute.

Buns & Assembly

    While patties are resting, spread 1/2 tbs (about half of the butter) on the cut sides of each bun. In a separate skillet over medium heat (or on the grill), toast the buns cut-side down 1-2 minutes until golden-brown and slightly crisp. Alternatively, brush buns with melted butter and toast under a broiler for 1-2 minutes, watching closely.

    Place the bottom bun on a plate, add lettuce leaf, then the rested patty (with cheese if used). Top with tomato slices, pickle slices, and onion slices as desired. Add condiments (ketchup, mustard, mayonnaise) to the top bun, then place top bun to finish.

Choice Toppings

    Prepare the vegetables: wash lettuce and dry thoroughly. Slice the plum tomato into 1/4-inch rounds. Slice onion into thin rings. Arrange toppings on a small platter so guests can choose their favorites.

    Serve pickles on the side or place on the burger according to preference.
