Hot Chocolate Base

    Warm dairy

    Combine 3 cups whole milk and 1 cup heavy cream in a medium saucepan. Warm over medium-low heat until steam rises and small bubbles form around the edge (do not boil), about 5–7 minutes.

    Mix cocoa and chocolate

    While milk warms, whisk together 2 tablespoons unsweetened cocoa powder and 2 teaspoons granulated sugar in a small bowl to break up lumps. Add the 6 ounces finely chopped bittersweet chocolate to a heatproof bowl.

    Combine with chocolate

    Once the milk mixture is steaming, remove about 1/2 cup of the hot milk and pour it over the chopped chocolate and cocoa mixture. Let sit 30 seconds to melt, then whisk until smooth and glossy.

    Finish the hot chocolate

    Return the chocolate-milk mixture to the saucepan with the remaining milk, stirring constantly over low heat until fully incorporated and slightly thickened, about 2–3 minutes. Stir in 1 teaspoon vanilla extract and a pinch of fine sea salt. Taste and adjust sweetness if desired. Keep warm on the lowest heat or set aside covered while you make the crema.

Crema (Whipped Coffee-Style Topping)

    Bloom espresso

    In a small bowl, stir 1 teaspoon instant espresso powder with 1 teaspoon just-off-boiling hot water until dissolved to concentrate flavor. Let cool for 1 minute.

    Whip crema

    In a chilled mixing bowl, combine 1 cup cold heavy cream, the dissolved espresso, 2 tablespoons granulated sugar, 1 tablespoon powdered sugar and 1 teaspoon vanilla extract. Using an electric hand mixer (or stand mixer with whisk), start on low and increase to medium-high. Whip until medium-firm peaks form — the mixture should be thick enough to hold its shape on a spoon but still billowy, about 2–4 minutes. Do not overwhip into butter.

    Sweetness check

    Taste the whipped crema and adjust sweetness with a teaspoon more powdered sugar if needed. Keep chilled until ready to assemble.

Assembly & Garnish

    Divide the hot chocolate into 4 heatproof mugs (about 1 cup each).

    Spoon a generous dollop (about 2–3 tablespoons) of the whipped crema onto each mug so it floats on the surface.
