Prepare Rice

    Place the basmati rice in a fine-mesh sieve or bowl. Rinse under cold running water, rubbing the grains gently, until the water runs clear (about 1–2 minutes). Drain well. This removes excess starch for fluffy rice.

    Soak (optional)

    If time allows, transfer rinsed rice to a bowl and cover with cold water for 15–20 minutes, then drain. Soaking shortens cooking time and improves texture.

Cook Aromatics & Toast Spices

    Heat a medium saucepan over medium heat. Add the butter or oil and warm until shimmering. Add the chopped onion and a pinch of salt; sauté 4–5 minutes until soft and translucent but not browned.

    Add the minced garlic and grated ginger; sauté 30–45 seconds until fragrant. Stir in the ground turmeric, cumin, and coriander and cook 20–30 seconds to bloom the spices—this deepens their flavor. Remove any spices sticking to the pan edges with a wooden spoon.

Combine & Simmer

    Add the drained rice to the saucepan with the aromatics. Stir to coat the rice evenly with the spiced butter/oil for 1 minute; this toasts the rice lightly and infuses it with flavor.

    Pour in the water and broth, add the bay leaf, salt, and black pepper. Stir once to combine and bring mixture to a gentle boil over medium-high heat.

    Once boiling, reduce heat to low, cover the saucepan with a tight-fitting lid, and simmer undisturbed for 12–15 minutes, or until the liquid is absorbed and rice is tender. Avoid lifting the lid during this time to keep steam trapped.

Rest & Finish

    Turn off the heat and let the rice rest, covered, for 8–10 minutes. This finishes cooking by steam and prevents mashed grains.

    Remove the lid, discard the bay leaf, and gently fluff the rice with a fork. Stir in the lemon or lime juice and chopped cilantro. Taste and adjust seasoning with additional salt or pepper if needed.
