Prepare BBQ sauce (if using store-bought skip to next step)
Combine 1 cup BBQ sauce, apple cider vinegar, brown sugar, black pepper and smoked paprika in a small saucepan over medium heat. Bring to a gentle simmer, stirring, then reduce heat and simmer 4–5 minutes until slightly thickened. Taste and adjust salt or sweetness as needed. Remove from heat.

Warm and dress proteins
For pulled pork or shredded chicken: place 1 lb meat in a medium saucepan or ovenproof dish. Add about 1/2 to 3/4 cup of the prepared BBQ sauce and 1–2 tablespoons water if needed to loosen. Heat gently over low-medium heat, stirring occasionally, until warmed through (about 8–10 minutes). For sliced brisket: heat slices in a cast-iron skillet over medium-low with 1/4 cup BBQ sauce, turning once, until warmed (about 4–6 minutes). Keep covered or tented to retain moisture.

Prepare buns
Split 4 brioche buns horizontally. Lightly butter the cut sides with the softened unsalted butter.

Onion & pickles
If using raw onion, toss thin slices with 1/4 tsp salt and a splash (1 tsp) of apple cider vinegar or water to soften flavor for 5 minutes, then drain. Keep pickles ready.

Coleslaw (optional)
If using coleslaw, season to taste with a little salt and a spoonful of BBQ sauce or mayonnaise to complement the sandwich. Keep chilled until assembly.

Assemble sandwiches just before serving to keep buns from getting soggy.

For each sandwich: place bottom bun on a plate. Pile 4 oz (about 1/4 lb) of the chosen warm meat (pulled pork, shredded chicken, or brisket slices) onto the bun. Spoon an additional 1–2 tablespoons of BBQ sauce over the meat if you like it saucier.

Place the toasted top bun on the sandwich, press lightly, and serve immediately. Repeat for remaining sandwiches.
