    Preheat and prepare

    Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper or a silicone mat to prevent sticking and promote even browning.

    Cut sweet potatoes

    Wash and dry the sweet potatoes. Using a mandoline with a waffle/Crinkle cut blade or a waffle fry cutter, slice each sweet potato. To get the waffle pattern, rotate the potato 90 degrees between passes so each pass cuts perpendicular to the last. Aim for 1/8–3/16 inch (3–5 mm) thickness per slice. Keep slices roughly uniform for even cooking.

    Dry and toss

    Place the waffle-cut slices in a single layer on a clean kitchen towel or paper towels. Pat the tops and bottoms to remove excess surface moisture, which helps them crisp. Transfer to a large bowl and sprinkle the cornstarch over the slices; toss gently to coat evenly. The cornstarch helps create a crisper exterior.

    Season and oil

    Add the olive oil, smoked paprika, garlic powder, salt, and black pepper to the bowl with the coated sweet potato slices. Toss thoroughly so each waffle fry is lightly and evenly coated with oil and seasoning.

    Arrange on sheets

    Arrange the seasoned waffle fries in a single layer on the prepared baking sheets, leaving small gaps between pieces so hot air can circulate. Avoid overcrowding; use both sheets if necessary.

    Bake and flip

    Bake in the preheated oven for 12 minutes. Remove baking sheets, flip each waffle fry using tongs or a thin spatula to promote even browning, then rotate the pans between racks if using more than one. Return to oven and bake another 8–12 minutes, watching closely so edges brown but do not burn. Total baking time will be about 20–24 minutes depending on thickness and oven. For extra crispiness, broil 1–2 minutes at the end, watching constantly.

    Cool briefly and serve

    Remove fries from the oven and let them rest on the baking sheets for 2–3 minutes to firm up. Transfer to a serving platter and serve warm with the honey dipping sauce on the side.

Honey Dipping Sauce

    In a small bowl, combine the honey and lemon juice. Stir until smooth. If the honey is very thick or you prefer a thinner sauce, add up to 1 teaspoon of hot water and stir to incorporate. Taste and add a pinch (about 1/4 tsp) of sea salt if you want a sweet-salty contrast. Transfer to a small dipping dish.
