Cake Batter
Whisk the dry ingredients: in a medium bowl, whisk together 2 cups all-purpose flour, 1 cup granulated sugar, 2 tsp baking powder, and 1/2 tsp fine salt until evenly combined.
Combine wet ingredients: in a separate large bowl, whisk together 3 large eggs, 1/2 cup melted cooled unsalted butter, 3/4 cup whole milk, 2 tsp vanilla extract and 1 tbsp lemon zest until smooth.
Make the batter: add the dry ingredients to the wet ingredients in two additions, folding gently with a rubber spatula or mixing on low speed until just combined. Do not overmix; a few small lumps are okay.
Cool: let the cake cool in the pan on a wire rack for 10–15 minutes, then run a knife around the edge and invert onto the rack to cool completely. For easier assembly, you can halve the cooled cake horizontally with a long serrated knife to create two layers.
Mascarpone Filling / Frosting
Chill equipment: place the mixing bowl and beaters in the refrigerator for 10 minutes if your kitchen is warm—this helps the cream whip better.
Stabilize with whipped cream: in a separate bowl, whip 1/2 cup cold heavy cream to soft peaks. Fold the whipped cream gently into the sweetened mascarpone mixture until homogenous and silky. Taste and adjust sweetness or lemon if desired.
Refrigerate: cover and chill the mascarpone cream while you prepare the berries (at least 15 minutes).
Berry Layer & Garnish
Macerate berries: in a medium bowl combine 1 cup sliced strawberries, 3/4 cup blueberries and 1/2 cup raspberries with 2 tsp granulated sugar. Gently toss and let sit for 10–15 minutes until juices release. If using, stir in 1 tbsp optional liqueur (omit for non-alcoholic).
Reserve some whole berries: set aside a small handful of whole berries for topping and garnish.
Drain or keep syrup: if the berries release a lot of juice and you prefer a less wet cake, drain the berries lightly, reserving 1–2 tablespoons of the juice to brush on the cake layers or mix into the simple syrup.
Assembly / Optional Syrup
Prepare optional syrup: if using, combine 3 tablespoons simple syrup (or 2 tbs warmed sugar water) with 1 tablespoon rum or orange liqueur. Warm slightly and cool to room temperature.
Slice cake layers (if halved): place the cooled cake on a cutting board and slice horizontally into two even layers with a serrated knife. If you did not split the cake, you can halve as above or spread topping on whole cake and serve individually.
Brush with syrup: lightly brush the cut surfaces of each cake layer with the optional simple syrup (about 1–2 tablespoons total) to keep layers moist and add flavor.
Fill: place the bottom layer on a serving plate. Spread about half of the mascarpone cream evenly over the bottom layer (about 3/4 to 1 cup). Spoon and evenly distribute half of the macerated berries (with a few spoonfuls of their juices if desired) over the mascarpone, leaving some berries for the top layer.
Top layer and crumb coat: place the top cake layer gently over the berries. Using an offset spatula, spread the remaining mascarpone cream over the top and sides of the cake for a rustic finish. If you prefer a cleaner look, refrigerate 10–15 minutes and apply a second thin layer to smooth.
Garnish: arrange the reserved whole berries on top, sprinkle lemon zest and a few mint leaves. Dust lightly with powdered sugar if desired.
Chill before serving: refrigerate the assembled cake for at least 30 minutes to set the mascarpone. For best texture and flavor, chill 1–2 hours. Allow cake to sit at room temperature 10–15 minutes before slicing for easier cutting.
