Stuffed Banana Peppers

    Prepare peppers

    Preheat the oven to 375°F (190°C). Rinse the banana peppers and pat dry. Slice a thin lengthwise slit down each pepper and remove seeds and membranes with a small spoon or paring knife, keeping the pepper largely intact so it will hold filling.

    Make cheese filling

    In a medium bowl combine ricotta, shredded mozzarella, softened cream cheese, 2 tablespoons grated Parmesan, 1 tablespoon chopped parsley, 1 clove minced garlic, 1/2 tsp salt, 1/4 tsp black pepper and 1 tsp olive oil. Mix until smooth and homogenous. Taste and adjust seasoning if desired.

    Stuff peppers

    Using a spoon or piping bag, fill each prepared banana pepper cavity with the cheese mixture, pressing gently to fill completely but not overstuffing. Place the stuffed peppers seam-side up in a lightly oiled small baking dish so they are close but not squashed.

    Top and bake

    Sprinkle the tops of the stuffed peppers with the additional 1 tablespoon grated Parmesan and the optional 2 tablespoons extra shredded mozzarella if you want a bubbly browned top. Bake in the preheated oven for 18–22 minutes, until the filling is hot and cheese is melted and lightly golden. If you prefer more browning, switch to broil for 1–2 minutes while watching carefully.

    Finish

    Remove from oven and let rest 2–3 minutes. Garnish with the remaining chopped parsley. Serve hot alongside the garlic bread.

Garlic Bread

    While peppers bake, prepare garlic bread. Slice the baguette lengthwise or into 1-inch slices. In a small bowl, mix softened butter with 1 clove minced garlic, 1 teaspoon chopped parsley and 1/8 tsp salt until combined.

    Spread the garlic butter evenly over the cut sides of the bread. Place bread on a baking sheet and warm in the oven with the peppers for the last 6–8 minutes of baking, or toast separately at 375°F (190°C) for 6–8 minutes until golden and crisp. For extra crispness, broil 30–60 seconds at the end—watch closely.

    Remove garlic bread from oven, slice if whole, and serve warm alongside the stuffed banana peppers.
