    Prep ingredients

    If using fresh corn, remove husks and silks and cut kernels from the cobs. If using frozen, thaw and drain. Seed and finely dice the jalapeños (reserve seeds if you want more heat) and the red bell pepper. Thinly slice the scallions and set aside for garnish.

    Cook bacon

    Place bacon slices in a cold skillet in a single layer. Turn heat to medium and cook, turning occasionally, until crisp, about 8–12 minutes. Transfer to a paper towel–lined plate to drain and cool. When cool, crumble into bite-size pieces. Reserve 1 tablespoon of bacon fat in the skillet; discard remaining fat or save for another use.

Blackened Corn

    Mix blackening spice

    In a small bowl, whisk together smoked paprika, garlic powder, onion powder, ground cumin, cayenne pepper, salt, and black pepper until evenly combined.

    Blacken the corn

    Heat the skillet with the reserved tablespoon of bacon fat over medium-high heat until shimmering. Add the corn kernels in an even layer (work in batches if necessary). Let the corn cook undisturbed 2–3 minutes to develop a dark char, then stir or toss and cook another 2–3 minutes until another portion is charred. Sprinkle about two-thirds of the blackening spice mixture over the corn and stir to coat. Continue cooking 1–2 minutes until the corn is fragrant and has multiple charred bits.

    Add peppers

    Reduce heat to medium. Add the diced jalapeño and red pepper to the skillet with the corn. Cook 2–3 minutes until the peppers begin to soften but still hold their shape. Taste and add a pinch more salt or spice if desired.

Sweet Butter Sauce & Finish

    Make the sauce

    In a small saucepan over low heat, combine the unsalted butter, honey, brown sugar, and apple cider vinegar. Stir until the butter is melted and the sugar is dissolved and the mixture is glossy, about 2–3 minutes. Remove from heat.

    Combine everything

    Pour the warm sweet butter sauce over the blackened corn and peppers in the skillet. Stir to coat evenly. Add the crumbled bacon and two-thirds of the shredded mozzarella; stir gently to distribute. Scatter the remaining mozzarella over the top and cover the skillet (or transfer to a broiler-safe dish) for 2–3 minutes to melt the cheese. If using a broiler, place under high broiler for 1–2 minutes—watch closely to avoid burning.

    Garnish & serve

    Remove from heat. Sprinkle sliced scallions over the melted cheese and corn. Serve immediately with tortilla chips on the side and lime wedges if using. Offer extra chips for scooping the cheesy blackened corn mixture.
