    Prepare chicken

    Trim any excess fat from the chicken. Lay the chicken pieces flat and slice across the grain into very thin strips about 1/8–1/4 inch thick. If the pieces are large, cut them into bite-sized strips so they will cook evenly.

    Optional light dredge

    If you want slightly crisped edges, toss the sliced chicken with 1 tsp cornstarch, salt and pepper until lightly coated. This step is optional but helps with browning.

    Cook aromatics

    Heat a large skillet or cast-iron pan over medium-high heat. Add 1 tbsp olive oil and 1 tbsp butter. When butter foams, add the thinly sliced onion and cook 4–6 minutes, stirring occasionally, until softened and beginning to caramelize. Add the sliced green pepper and cook 3–4 minutes until softened but still a little crisp. Stir in the minced garlic and cook 30 seconds until fragrant.

    Sear chicken

    Push the vegetables to the sides of the pan. Increase heat to high and add the sliced chicken in a single layer if possible (work in batches if needed). Let the chicken sear without moving 1–2 minutes to develop color, then stir and continue to cook 2–3 minutes until cooked through and no longer pink. Season with 1 tsp kosher salt, 1/2 tsp black pepper, 1/2 tsp smoked paprika, and 1 tbsp Worcestershire sauce. Stir to combine and mix with the onions and peppers.

    Combine & finish

    Lower heat to medium and stir everything together so flavors meld 1–2 minutes. Taste and adjust seasoning with additional salt, pepper, or Worcestershire if desired. If the mixture seems dry, add a splash (1–2 tsp) of water or broth to loosen.

    Prep rolls

    Split the hoagie rolls lengthwise, keeping one side attached if you prefer. Butter the cut faces lightly with the 2 tbsp butter.

    Toast rolls

    Heat a separate large skillet or grill pan over medium heat. Place the buttered rolls cut-side down and toast 1–2 minutes until golden and slightly crisp. Remove and set aside.

    Melt cheese over chicken

    With the chicken filling still in the pan on medium-low, divide it into four mound portions. Lay 1–2 slices of provolone over each portion so it covers the top. Cover the pan with a lid for 1–2 minutes or until the cheese melts and becomes gooey.

    Assemble sandwiches

    Spread about 1/2 tbsp mayonnaise inside each toasted roll if using. Using a spatula, scoop a cheesed portion of the chicken and vegetables into each roll. Add pickled banana peppers or pickles as desired and sprinkle with chopped parsley.

    Serve the sandwiches hot. Optionally wrap in parchment and press briefly for 30 seconds to help set. Enjoy immediately.
