    Prepare the Pork Chops

    Place the pork chops between two pieces of plastic wrap and pound them with a meat mallet until they are about 1/2 inch thick. This will tenderize the meat and help it cook evenly.

    Marinate the Chops

    Spread Dijon mustard evenly over both sides of the pork chops. Season with salt and black pepper. Let them marinate for at least 15 minutes.

    Cook the Pork Chops

    In a large skillet, heat olive oil over medium-high heat. Add the pork chops and cook for about 3-4 minutes on each side, or until they are nicely browned and cooked through.

    Prepare the Arugula Salad

    In a bowl, toss the arugula with the juice of half the lemon and a pinch of salt and pepper.

    Serve

    Plate the pork chops and top with the arugula salad. Squeeze the remaining lemon juice over the top for added flavor. Serve immediately.
