Prepare the Pasta
In a large pot of boiling salted water, cook the tagliatelle according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Prepare the Sauce
In a bowl, whisk together the duck egg yolks, grated Parmesan cheese, and black pepper until well combined.

Combine Everything
Add the drained tagliatelle to the skillet with the bacon. Toss to coat in the bacon fat. Remove from heat and quickly add the egg mixture, stirring vigorously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve
Plate the carbonara and top with Paddlefish caviar. Garnish with additional Parmesan cheese and freshly cracked black pepper. Serve immediately.
