Combine sauce ingredients

In a small bowl, whisk together the mayonnaise, ketchup, mustard, sweet pickle relish, apple cider vinegar, paprika, and black pepper until smooth. Taste and adjust seasoning. Refrigerate while you prepare the rest of the burger.

Prepare Patties

Form and season patties

Divide the 1 lb ground beef into four equal portions (about 4 oz each). Gently form into thin, slightly wider-than-bun patties (they will shrink as they cook). Avoid overworking the meat. Lightly brush or spray a skillet with 1 tsp vegetable oil. Season both sides of each patty with kosher salt (approximately 1/4 tsp per side) and freshly ground black pepper. Lightly brush or sprinkle Worcestershire sauce on one side of each patty.

Cook Patties & Onions

Preheat and cook

Heat a large cast-iron skillet or griddle over medium-high heat until very hot (about 3–5 minutes). Place two patties in the pan, seasoned-side down. Cook undisturbed for 2–3 minutes until a brown crust forms. Flip and cook 1–2 minutes on the other side. Place an American cheese slice on each patty immediately after flipping to melt while finishing. Repeat with the remaining two patties so you have four thin, cheesy patties total. If using raw onion slices and you prefer them softened, cook them in the same pan 1–2 minutes per side until translucent; for caramelized onions, cook low and slow in a bit of oil for 20–25 minutes until golden.

Toast Buns

While patties are finishing, spread softened butter on the cut sides of the buns. Place cut-side down in a dry skillet or on the griddle over medium heat for 1–2 minutes until golden and slightly crisp. Remove from heat.

Assemble Double Stack Burger

Place the bottom bun on a plate. Spread about 1 tablespoon of burger sauce on the bottom bun. Add a lettuce leaf, two tomato slices, and two pickles. Stack two hot cheese-topped patties on the vegetables. Spread another 1 tablespoon of sauce on the top of the first stack, then add a second lettuce leaf and two more patties (or place remaining two patties stacked directly on the first stack for a classic double-double). Top with sliced onion if using. Spread remaining sauce on the top bun and place on the burger.

Press gently to compact the stack slightly, cut in half if desired, and serve immediately while hot.
