    Prep bread and spread

    Bring bread to room temperature if chilled. Spread 1 tbs mayonnaise evenly on one slice and spread Dijon mustard on the other slice (about 1 tsp).

    Toast pan and butter

    Heat a nonstick skillet over medium heat. Spread the unsalted butter evenly on the outside faces of both bread slices (the outsides that will contact the pan).

    Assemble sandwich interior

    On the mayo-covered slice place the lettuce leaves, then overlap the turkey slices (about 3 oz total), season the tomato slices with 1/8 tsp salt and 1/16 tsp pepper, place tomato on top of turkey, then add the cheddar slice. Close sandwich with the mustard-spread slice (mustard side inside).

    Grill sandwich

    Place sandwich in the preheated skillet, press gently with a spatula, and cook 2–3 minutes per side or until bread is golden brown and cheese has started to melt. If bread is browning too quickly, reduce heat to medium-low and cover pan for 30–60 seconds to help melt the cheese. Transfer to a cutting board and let rest 1 minute, then cut in half.

    Prep and dress

    While the sandwich is grilling, place 2 cups mixed greens in a bowl. Slice cucumber into half-moons to measure 1/2 cup; halve cherry tomatoes to total 6 pieces. Add cucumber and tomatoes to the greens. Drizzle 1 tbs olive oil, 1/2 tsp red wine vinegar and optional 1/2 tsp lemon juice over the salad. Season with 1/8 tsp salt and a pinch (1/16 tsp) pepper. Toss gently to coat and set aside until ready to serve.

Side B — Crispy oven fries

    Preheat and prep potato

    Preheat oven to 425°F (220°C). Wash the potato thoroughly and, if desired, peel. Cut into 1/4–1/2-inch thick fries or wedges (about 12–16 pieces). Pat dry with paper towels to remove surface moisture.

    Season fries

    Toss the cut potato pieces in a bowl with 1 tsp olive oil, 1/4 tsp paprika, 1/8 tsp garlic powder, 1/4 tsp salt, and 1/16 tsp black pepper until evenly coated.

    Bake until crisp

    Arrange fries in a single layer on a rimmed baking sheet (use parchment or lightly oiled sheet). Bake in the preheated oven for 18–25 minutes, turning once halfway through, until edges are golden and centers are tender. For extra crispness, broil 1–2 minutes at the end while watching closely.

    Finish and season

    Remove fries from oven, taste and adjust seasoning with a pinch more salt if needed. Serve hot alongside the sandwich and salad.
