Smoked Brisket

Prepare rub and brisket
Combine kosher salt, black pepper, garlic powder, onion powder and paprika in a small bowl to make a dry rub. Pat brisket dry with paper towels. Rub the entire surface evenly with the dry rub, pressing it into the meat. Let rest at room temperature 45 minutes or refrigerate up to overnight.

Smoke
Preheat smoker to 225°F (107°C). Add soaked wood chips. Place brisket fat side up on the smoker grates. Smoke until internal temperature reaches 165°F (about 4–5 hours depending on size). Every hour spray or mop with a mixture of beef broth and apple cider vinegar (combine before starting).

Season pork
Combine brown sugar, kosher salt, chili powder, smoked paprika and cumin. Rub mixture all over pork shoulder. Let sit at room temperature 30 minutes or refrigerate overnight for deeper flavor.

Make dressing
In a bowl whisk together mayonnaise, apple cider vinegar, sugar, celery seed and kosher salt until smooth.

Combine vegetables
In a large bowl toss shredded green and red cabbage and grated carrot with the dressing until evenly coated. Chill at least 30 minutes for flavors to meld. Taste and adjust salt if needed before serving.

Grill
Place corn directly on the grill and cook, turning every 2–3 minutes, until kernels are tender and charred in spots, about 10–12 minutes total. Remove and serve with lime wedges and additional butter if desired.
