Chill a tall (12–16 oz) highball glass by filling it briefly with ice or placing it in the freezer for a few minutes. Discard any initial chilling ice and add fresh ice to the glass until about three-quarters full.

Measure 2 oz light rum, 0.75 oz fresh lime juice and 0.5 oz simple syrup into a cocktail shaker or mixing glass. Add 2–3 large ice cubes.

Shake vigorously for about 10 seconds to chill and slightly dilute. If you prefer a lighter texture, you may stir instead, but shaking helps integrate citrus and syrup.

Strain the shaken mixture into the prepared highball glass over the fresh ice.

Top the drink with about 4 oz ginger beer, pouring gently to preserve carbonation. Give the drink one gentle stir (about 4–5 revolutions) to combine.

Add 2 dashes Angostura bitters over the top — they will float and then gradually integrate, adding aromatic depth.

Garnish with a lime wheel or wedge on the rim and, if using, a sprig of fresh mint tucked beside the garnish. Serve with a straw if desired.

Taste and adjust: if the drink is too tart, add a splash (0.25 oz) more simple syrup; if too sweet, add a squeeze (0.25 oz) more lime juice. Enjoy immediately while fizzy.
