Rose Cocktail

    Prepare ingredients

    Chill a coupe or martini glass in the freezer or with ice water. If using an egg white, separate one egg and reserve the white. Measure out gin, dry vermouth, elderflower liqueur, lemon juice, simple syrup and rose water.

    Dry shake (if using egg white)

    In a shaker, combine 2 oz gin, 3/4 oz dry vermouth, 1/2 oz elderflower liqueur, 1/2 oz fresh lemon juice, 1/4 oz simple syrup, 1/4 tsp rose water, 1/2 egg white and 1 dash Angostura bitters. Seal the shaker and shake vigorously without ice for 15–20 seconds to emulsify the egg white and build a silky foam.

    Wet shake

    Add 1 cup of ice to the shaker. Shake again vigorously for 10–15 seconds until the shaker is very cold to the touch and the cocktail is well chilled and slightly diluted.

    Strain and serve

    Discard ice or water from the chilled glass. Double-strain the cocktail through a fine mesh strainer into the chilled coupe or martini glass to remove ice shards and any coagulated egg bits (if used).

    Finish and garnish

    Optionally add a final tiny drop of rose water on top of the foam for aroma (be careful — rose water is potent). Garnish with a single edible rose petal floated on the foam or a lemon twist. Serve immediately.
