Prepare Cocktail

    Chill glass

    Place a coupe or chilled martini glass in the freezer or fill it with ice water to chill while you prepare the cocktail.

    Combine base ingredients

    In a cocktail shaker, combine 2 oz gin, 0.75 oz Lillet Blanc, 0.5 oz freshly squeezed lemon juice, 0.25 oz simple syrup, and 2 dashes orange bitters.

    Add ice and shake

    Add ice (about 6 cubes) to the shaker. Secure the lid and shake vigorously for 10–12 seconds until the outside of the shaker is frosty and the mixture is well chilled and slightly diluted.

    Strain

    Discard the ice or water from the chilled glass. Double-strain the shaken mixture into the chilled coupe/martini glass using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and pulp.

    Top with sparkling wine

    Carefully top the cocktail with 2 oz (about a splash) of chilled Champagne or other dry sparkling wine. Pour gently down the side of the glass to preserve carbonation.

    Garnish and serve

    Express the oils from a lemon twist over the cocktail by holding the twist over the drink and giving it a quick squeeze, then run the twist around the rim and drop it into the glass. Optionally add an edible flower or mint sprig for appearance. Serve immediately.
