Coffee & Water

Optional Additions

Method

Preparation

  1. 1

    Measure coffee

Weigh 35 g (0.035 kg) of medium-coarse ground coffee. This yields a coffee-to-water ratio of about 1:15 (35 g coffee to 525 ml water) which makes a standard-strength pot. Adjust dose up or down for stronger or weaker coffee.

  2. 2

    Measure water

Measure 540 ml of filtered water for brewing. The slight extra accounts for absorption by the grounds (roughly 2–2.5 g water per g coffee) and loss in the carafe.

  3. 3

    Heat water

Heat the 540 ml of filtered water until it reaches 92–96°C (197–205°F). If you don't have a thermometer, bring to a boil and let sit covered for 30 seconds.

Set up dripper

  1. 4

    Prepare filter

Place a paper filter in the dripper (cone or basket). If using a reusable metal filter, skip rinsing but ensure it's clean.

  2. 5

    Rinse filter

Pour the 60 ml of hot water over the paper filter to rinse away paper taste and preheat the dripper and carafe. Discard the rinse water from the carafe.

  3. 6

    Add grounds

Place the measured 35 g of coffee into the warmed, rinsed filter and gently level the bed of grounds so water will flow evenly.

Brewing

  1. 7

    Bloom

Start a timer. Pour just enough hot water (about 70 g/ml — roughly 70 ml) evenly to saturate the grounds. Allow the coffee to bloom for 30–45 seconds. This releases trapped CO2 and improves extraction.

  2. 8

    Main pour

After the bloom, continue pouring the remaining water in slow, steady concentric circles, avoiding pouring directly on the paper near the edges. Aim to finish pouring by 2:00–2:15 minutes.

  3. 9

    Drawdown

Allow the water to drain through the grounds. Total brew time (from first pour to end of drawdown) should be about 3:00–4:30 minutes depending on grind and dripper. If drawdown is faster than 3 minutes, grind slightly finer next time; if slower than 5 minutes, grind coarser.

Finish & Serve

  1. 10

    Remove dripper

When dripping has stopped or slowed to drops, remove dripper and discard the used filter and grounds (or compost them).

  2. 11

    Serve

Swirl the carafe gently to homogenize the brew. Pour into cups. If desired, add milk/creamer (about 50 ml per serving) and sugar to taste (start with 1 tsp). A tiny pinch of salt (0.25 tsp) can reduce bitterness if desired.

  3. 12

    Storage note

Serve immediately for best flavor. Brewed drip coffee may be kept on a thermal carafe for up to 1 hour; avoid reheating on a hotplate which will degrade flavor.
