Prepare the Filling
In a large mixing bowl, combine ground pork, finely chopped cabbage, grated carrot, soaked and chopped glass noodles, chopped mushrooms, minced garlic, soy sauce, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
Assemble the Rolls
Take a spring roll wrapper and place about 2 tablespoons of the filling mixture in the center. Fold the bottom edge over the filling, then fold in the sides and roll tightly to seal. Repeat with remaining wrappers and filling.
Fry the Rolls
Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully add the rolls in batches, frying until they are golden brown and crispy, about 4-5 minutes per side. Remove from oil and drain on paper towels.
Serve
Serve the fried pork rolls hot with sweet and sour sauce for dipping.
