    Assemble

    Fill a highball or Collins glass with 1 cup of cubed ice.

    Pour spirit

    Measure and pour 1.5 oz light rum (well) over the ice. Note: the recipe is written for a classic well drink emphasizing the house spirit; if your bar's well is vodka, gin or another spirit, substitute 1.5 oz of that spirit instead.

    Add flavoring

    Add 0.5 oz fresh lime juice and 0.25 oz simple syrup to the glass.

    Bitters

    Add 1 dash of Angostura bitters to round the flavor.

    Top and stir

    Top with 1.5 oz soda water if desired for a lighter drink. Stir gently with a bar spoon 6–8 times to combine ingredients and chill.

    Garnish

    Slip a lime wheel or wedge onto the rim and serve with a straw or stirrer.

    Notes: Taste and adjust sweetness with up to 0.25 oz more simple syrup if needed. For a stronger, undiluted option skip the soda water.

    Prepare container

    Chill a large pitcher or beverage dispenser. Add 8 cups of cubed ice to a serving container or have ice ready for individual glasses.

    Combine ingredients

    In the chilled pitcher, combine 12 oz light rum (well), 4 oz fresh lime juice, 2 oz simple syrup and 8 dashes of Angostura bitters. Stir well to dissolve the syrup and integrate the bitters.

    Serve

    Pour the batched mix into highball glasses filled with ice (about 1 cup per glass). Top each glass with 1.5 oz soda water if desired and stir gently once.

    Garnish

    Garnish each glass with a lime wheel or wedge and serve immediately.

    Notes: Batch makes approximately 8 standard servings at 1.5 oz spirit per drink. Adjust simple syrup to taste before serving. If your bar's well spirit differs, substitute the same total spirit volume (12 oz) with the bar's well spirit.
