Prep wings
Pat the 2 lb of chicken wings dry with paper towels. If whole wings are used, separate into drumettes and flats and remove tips.
Place the wings in a large bowl or resealable bag.
In a measuring cup or small bowl combine 12 oz lager, 2 tbsp soy sauce, 1 tbsp apple cider vinegar, 1 tbsp brown sugar, 3 minced garlic cloves, 1 tsp black pepper and 1 tsp kosher salt. Stir until sugar dissolves.
Pour the beer marinade over the wings, press out excess air if using a bag, and refrigerate for 30 minutes to 2 hours. Do not marinate much longer than 2 hours to avoid meat texture change from the alcohol and acid.
Remove wings from marinade and pat dry thoroughly — this helps the coating adhere and prevents oil splatter. Reserve marinade if you plan to reduce for sauce (optional).
Dry Rub & Coating
While wings marinate, combine 1 cup all-purpose flour, 2 tbsp cornstarch, 1 tsp smoked paprika, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp cayenne, 1 tsp black pepper and 1 tsp kosher salt in a shallow dish or large zip-top bag and whisk to blend.
Toss the patted-dry wings in the flour/cornstarch mixture until evenly coated. For an extra-crisp finish, dip each coated wing into a thin slurry of 1 egg beaten with 2 tbsp water (optional), then dredge again in the dry mix.
Arrange coated wings on a wire rack set over a sheet pan and rest 10–15 minutes; this helps the coating set and adhere during frying.
Frying & Finish
Heat 1 cup neutral oil in a heavy skillet or Dutch oven over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test with a small pinch of coating — it should sizzle steadily and brown in about 45–60 seconds.
Work in batches so wings aren’t crowded. Fry wings 6–8 minutes per batch, turning once or twice, until golden brown and an internal temperature of 165°F (74°C) is reached. Transfer cooked wings to a wire rack or paper-towel–lined tray to drain briefly.
In a small saucepan or skillet over low heat, melt 2 tbsp butter, then add 3 tbsp hot sauce and 1 tbsp honey. Whisk until combined and warmed through — this creates a balanced sticky glaze.
Toss the hot fried wings in the warm sauce so each wing is well coated, or brush the sauce on if you prefer some plain crispy pieces.
Optional: If you reserved the marinade, simmer it in a small saucepan over medium heat until it reduces by half and comes to a full boil for at least 2 minutes to make a quick beer reduction; cool and brush lightly on wings for extra beer flavor (ensure marinade is fully cooked).
