Method

Prep

1

If the snow crab legs are frozen, thaw them in the refrigerator overnight or under cold running water for 20–30 minutes. Rinse crab legs under cold water and pat dry.

2

Scrub the red potatoes to remove any dirt. If potatoes are larger than bite-size, halve or quarter so pieces are roughly uniform (about 1 to 1½ inch). Husk corn and cut each ear in half if desired.

3

Cut the lemon in half; reserve one half for serving and slice the other half into wedges for butter.

Make the Steam Broth

4

In a large stockpot or steam pot (large enough to hold a steamer basket and ingredients), add 6 cups water, 1 tablespoon sea salt, 2 teaspoons Old Bay seasoning, 1 bay leaf, and 2 smashed garlic cloves.

5

Bring the mixture to a rolling simmer over medium-high heat (about 8–10 minutes). Taste briefly and adjust seasoning if needed — it should be mildly salty and aromatic.

Cook Potatoes and Corn

6

Place a steamer basket or rack inside the pot above the liquid level. Add the prepared red potatoes to the basket in a single layer if possible. Cover and steam for 12–15 minutes, or until potatoes are just tender when pierced with a fork.

7

Add the corn to the steamer basket on top of the potatoes, cover, and continue steaming for 6–8 minutes more, until corn is heated through and potatoes are fully tender. Keep the pot at a gentle simmer; add a splash of water if it dries out.

Steam Crab Legs

8

Nestle the thawed snow crab legs into the steamer basket on top of the corn and potatoes. If legs are too long, you can bend them or break at the joints so they fit comfortably.

9

Cover and steam the crab legs for 5–7 minutes if they are pre-cooked (typical for snow crab). If you have raw crab legs (rare), steam for 10–12 minutes. The crab should be heated through and fragrant; shells will be hot and the meat inside opaque.

10

Avoid overcooking; crab cooks quickly and will toughen if steamed too long.

Finish & Serve

11

While the crab is finishing, melt 4 tablespoons unsalted butter in a small saucepan over low heat or in a microwave-safe bowl. Stir in a squeeze of fresh lemon juice (about 1 teaspoon) and a pinch of Old Bay if desired.

12

Remove the pot from heat. Using tongs, transfer the crab legs, corn and potatoes to a large platter. Discard the bay leaf and garlic pieces from the pot.

13

Garnish the platter with lemon wedges and sprinkle optional chopped parsley over the potatoes and crab. Serve immediately with warm lemon butter for dipping.

14

Provide crab crackers or kitchen shears to help guests open the legs and remove the meat.
