Prepare rolls and produce
Slice each French roll lengthwise, leaving a hinge if desired. Toast cut sides lightly in a 400°F (200°C) oven or on a skillet until just golden, about 3–4 minutes. Rinse and spin-dry the lettuce, then shred or tear into sandwich-size pieces. Slice tomato into 1/4-inch rounds and season lightly with a pinch of salt. Set rolls, lettuce, and tomato aside for assembly.

Spread about 3 tablespoons of mayonnaise mixture (see Sauces section if you want to mix mayo with a splash of hot sauce or a little lemon) on the bottom half of each roll. Keep top halves nearby for finishing.

Soak oysters
Place drained shucked oysters in a bowl and pour the buttermilk over them. Add 1 teaspoon hot sauce if using. Let soak 10–15 minutes — this helps flavor and helps the coating adhere.

Make dry mix
In a shallow wide bowl or rimmed baking sheet, whisk together the all-purpose flour, cornmeal, cornstarch, baking powder, Cajun or creole seasoning, kosher salt, and black pepper until evenly combined.

Dredge oysters
Working in batches (6–8 oysters at a time), remove oysters from buttermilk letting excess drip back into the bowl, then lightly dredge in the dry mix pressing gently so the coating adheres. Place coated oysters on a wire rack and let rest 5 minutes — the coating will set and stick better.
Frying

Heat oil
Pour oil into a deep heavy pot or Dutch oven to a depth of 2–3 inches (about 4–6 cups depending on vessel). Heat oil over medium-high heat until it registers 350°F (175°C) on a deep-fry thermometer.

Fry oysters
Fry coated oysters in batches, taking care not to overcrowd the pot. Cook 2.5–3.5 minutes per batch, turning once if needed, until golden brown and crisp. Use a slotted spoon or spider to transfer fried oysters to a paper towel–lined sheet pan or wire rack to drain and rest for 2–3 minutes. Adjust heat to maintain 325–350°F (160–175°C) as you fry remaining batches.

Season fried oysters lightly with a pinch of salt immediately after frying.
Cocktail & Tartar Sauces

Finish sauces
If using prepared sauces straight, transfer to small bowls for serving. To brighten the cocktail sauce, stir in 1 tsp Worcestershire sauce and a squeeze of lemon. For the tartar sauce, taste and add a little lemon juice if needed. Reserve about 2 tablespoons of each sauce per sandwich for assembly; the rest can be served on the side.
Assembly & Serve

On each toasted roll bottom, spread about 1.5 tablespoons of mayonnaise. Layer with a handful (about 1/2 cup) of shredded lettuce, 3–4 tomato slices, then divide the hot fried oysters evenly (6 oysters per sandwich). Spoon about 1 tablespoon cocktail sauce and 1 tablespoon tartar sauce over the oysters (or serve sauces on the side). Top with pickles if using, close the sandwich and serve immediately with lemon wedges.

Serve hot. Provide extra cocktail and tartar sauces and lemon wedges at the table.
