Crab Cakes

Prepare crab meat
Inspect the jumbo lump crab meat for any shells and gently pick through by hand. Pat the crab meat lightly with paper towels to remove excess moisture — be gentle to keep lumps intact.

Make crab cake mixture
In a large bowl, combine the softened cream cheese, grated smoked Mexican Parmesan, minced pickled jalapeños, chopped chives, chopped parsley, Dijon mustard, Worcestershire sauce and the lightly beaten egg. Mix until smooth and homogeneous.

Fold in crab and panko
Gently fold the crab meat into the cream cheese mixture using a rubber spatula, keeping lumps as intact as possible. Sprinkle in the panko breadcrumbs, kosher salt and black pepper, then fold just until the mixture holds together when pressed. If mixture is too loose, add up to 2 tablespoons more panko.

Form cakes
Portion the mixture into six 3-ounce (about golf-ball sized) portions for small appetizers or four 4.5–5 ounce portions for larger cakes. Using lightly oiled hands or a ring mold, gently form each portion into a compact patty about 1 to 1¼ inches thick. Chill on a parchment-lined tray in the refrigerator for at least 20 minutes to firm up — this helps them hold shape while cooking.

Cook crab cakes
In a large skillet over medium heat, add the butter and oil and heat until butter foams and oil shimmers. Add crab cakes (work in batches without crowding) and cook 3–4 minutes per side until a deep golden crust forms and the interior reaches about 140–145°F (if using a thermometer). Flip carefully once. Transfer cooked cakes to a warming pan or a rack while you finish the rest.

Keep warm
If finishing multiple batches, keep the cooked cakes loosely tented with foil in a 200°F oven to stay warm and crisp.
Pita Corn Relish

Combine the crushed pita chips, corn kernels, diced red bell pepper, minced red onion and chopped cilantro in a small bowl. Add the lime juice, olive oil, salt and pepper and toss to combine. Taste and adjust seasoning. The crushed pita adds crunch and a toasty flavor that complements the crab cakes. Refrigerate until ready to serve.
Chipotle Remoulade

In a bowl, whisk together the mayonnaise, Greek yogurt (or sour cream), minced chipotle, adobo sauce, lemon juice, smoked paprika, minced garlic, hot sauce (if using), salt and black pepper until smooth. Taste and adjust heat or acidity — add more adobo for smokiness or more lemon for brightness. Refrigerate at least 15 minutes to let flavors meld.
To Finish & Serve

Plate: Place a small smear of chipotle remoulade on each plate. Top with a warm crab cake. Spoon a generous tablespoon of pita corn relish alongside or on top for crunch. Sprinkle with extra smoked Mexican Parmesan and garnish with microgreens or baby arugula. Serve with a lemon wedge for squeezing.
