    If claws are whole with shell, rinse under cold water and pat dry. If not pre-cracked, use kitchen shears or a small mallet to lightly crack the larger shell at the knuckle so the breading can adhere and the meat will be easier to eat. Place claws in a bowl and season with 1 tsp kosher salt, 1 tsp freshly ground black pepper and 1 tablespoon hot sauce (if using). Toss to coat and let marinate 10–15 minutes while you prepare breading and oil.

Breading & Seasoning

    In a shallow bowl or pie plate, whisk together 3 tablespoons all-purpose flour and 1 tablespoon fine cornmeal.

    In a second shallow bowl combine 3 tablespoons panko breadcrumbs, 1 teaspoon paprika, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon cayenne, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Mix well so seasonings are evenly distributed.

Wet Batter & Dredge

    In a third bowl whisk together 1 large egg, 1/2 cup buttermilk, 1/2 teaspoon Worcestershire sauce and 1 teaspoon lemon zest until smooth.

    Dredging the crab claws

    Set up a three-station dredging line: seasoned flour/cornmeal (station 1), wet batter (station 2), seasoned panko (station 3). One at a time, dredge each marinated claw in the flour mix, shaking off excess, dip into the egg-buttermilk mixture letting excess drip back into bowl, then press into the panko mixture until well coated. Place coated claws on a wire rack and let rest 5–10 minutes to help coating adhere.

Frying & Finish

    Pour 2 cups neutral oil into a heavy-bottomed skillet or Dutch oven to a depth of about 1 to 1 1/2 inches. Heat oil over medium-high until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of panko into the oil — it should sizzle and brown in about 30–45 seconds.

    Fry claws in batches (do not overcrowd) for about 2 to 3 minutes per side, turning once, until golden brown and internal meat is hot. Smaller claws may take less time; larger claws may take up to 4 minutes. Maintain oil temperature between 325–350°F by adjusting heat as needed.

    Using a slotted spoon or spider, transfer fried claws to a paper towel-lined tray or wire rack set over a sheet tray to drain. If desired, immediately brush or toss with 1 tablespoon melted unsalted butter for extra richness and flavor.

Dipping Sauce (Optional)

    While claws rest, whisk together 1/4 cup mayonnaise, 1 teaspoon Creole or Dijon mustard, 1/2 teaspoon lemon juice, 1/2 teaspoon hot sauce, 1 tablespoon chopped green onion, 1/8 teaspoon salt and 1/8 teaspoon black pepper in a small bowl. Chill until ready to serve.
