Method
Prepare Dressing

Make Caesar dressing
In a medium bowl, whisk together the minced anchovy fillets, grated garlic, mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, kosher salt and black pepper until smooth. While whisking constantly, slowly drizzle in the 6 tablespoons of extra-virgin olive oil to emulsify the dressing. Taste and adjust seasoning (more lemon or salt as needed). Reserve in refrigerator while you prepare other components.

Sear and slice andouille
Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the sliced andouille sausage in a single layer and sear 2–3 minutes per side until nicely browned and heated through. Transfer to a paper-towel-lined plate to drain excess fat.

Quick-fry okra
In the same skillet (wipe if too greasy) or a clean skillet, heat 2 tablespoons vegetable oil over medium-high. Add the sliced okra in a single layer and cook, stirring occasionally, 4–5 minutes until edges are lightly browned and tender but not mushy. Season with 1/4 teaspoon salt toward the end. Remove and drain on paper towel.
Assemble Salad

Toss lettuce and dressing
Place the 6 cups chopped romaine into a large mixing bowl. Add about 3–4 tablespoons of the prepared Caesar dressing and toss gently to coat. Add more dressing as needed — the lettuce should be lightly but evenly coated, not swimming.

Add rice and combine
Fold in the warm cooked rice (1 cup) into the dressed greens. The rice adds body and a textural contrast; toss gently to combine so the rice warms through from the greens and sausage.

Top with sausage, okra and croutons
Arrange the seared andouille slices and fried okra evenly over the dressed lettuce and rice. Scatter 1 cup house-made croutons over the top, then sprinkle 3 tablespoons grated Reggiano/Parmesan. If desired, add an extra tablespoon of grated cheese as garnish.

Finish and serve
Transfer to individual plates or a large serving bowl. Offer lemon wedges on the side for diners who want extra brightness. Serve immediately so croutons remain crisp.
