Method
Crab dip base
- 1
Preheat and prepare
Preheat oven to 375°F (190°C). Lightly grease a shallow 1–1.5 quart oven-safe baking dish or pie plate with a little butter or nonstick spray.
- 2
In a medium bowl, use a rubber spatula to beat the softened cream cheese until smooth. Add the sour cream, mayonnaise, grated Parmesan, Creole/Cajun seasoning, Worcestershire sauce, lemon juice, black pepper, and kosher salt. Mix until thoroughly combined and smooth.
- 3
Fold in the shredded Monterey Jack (reserve 1/2 cup for topping) and the finely chopped pickled jalapeños. Taste and adjust seasoning—add an additional 1/4 to 1/2 teaspoon Creole seasoning or a pinch of salt if desired.
- 4
Gently fold the jumbo lump crab meat into the cream cheese mixture, taking care not to break up the lumps too much. Ensure crab is evenly distributed.
Finish & bake
- 5
Transfer the crab mixture to the prepared baking dish and smooth the top. Sprinkle the reserved 1/2 cup shredded cheese evenly over the surface.
- 6
Place dish on a baking sheet to catch any spills and bake in the preheated oven for 18–22 minutes, until the dip is bubbly and the top is lightly golden. For a more browned top, place under the broiler for 1–2 minutes—watch carefully to avoid burning.
Garnish & serve
- 7
Remove the dip from the oven and let rest 5 minutes. Sprinkle chopped fresh chives or parsley over the top, add thinly sliced pickled jalapeños if using, and dust lightly with smoked paprika for color and a hint of smoky flavor.
- 8
Serve warm with pita wedges or pita chips and optional bread, celery, or cucumber slices for scooping. Leftovers can be refrigerated in an airtight container for up to 3 days; reheat gently in a 325°F (160°C) oven until warmed through.
