Grill the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Let it rest for 5 minutes before slicing it into strips.

While the chicken is grilling, wash and dry the mixed greens. Slice the red and yellow bell peppers into thin strips and chop the red onion into thin slices.

Roughly chop the cashews and shred the cheddar jack cheese.

In a large bowl, combine the mixed greens, grilled chicken strips, sliced bell peppers, red onion, chopped cashews, and shredded cheese.

In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, sriracha sauce, minced garlic, and water until smooth and well combined.

Pour the spicy Thai peanut dressing over the salad ingredients and gently toss to ensure everything is well coated. Season with additional salt and pepper to taste.
