Crust

    Prepare the Crust

    In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and crumbly.

    Press the Crust

    Press the mixture into the bottom of a 9-inch springform pan evenly. Use the back of a measuring cup to pack it tightly. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes. Remove and let cool.

Cheesecake Filling

    Beat the Cream Cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

    Add Sugar and Sour Cream

    Gradually add the granulated sugar and sour cream while continuing to beat until well combined.

    Incorporate Eggs

    Add the eggs one at a time, mixing on low speed until just blended. Be careful not to overmix.

    Stir in the vanilla extract until evenly distributed.

    Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

    In a medium saucepan over medium heat, add the granulated sugar. Cook, without stirring, until it melts and turns a deep amber color.

    Once the sugar is melted, carefully add the unsalted butter and stir until melted. Then slowly pour in the heavy cream while stirring continuously until smooth.

    Remove from heat and stir in the sea salt. Allow to cool slightly before using.

Topping
