    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes, until the vegetables are softened and the onion is translucent.

    Add the minced garlic to the pot and sauté for an additional 1-2 minutes until fragrant.

Cooking the Soup

    Combine Ingredients

    Pour in the vegetable broth and water. Add the diced potatoes, chopped spinach or kale, salt, black pepper, dried thyme, and bay leaf. Stir to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-25 minutes, or until the potatoes and other vegetables are tender.

Finishing Touches

    Taste and Adjust

    Remove the bay leaf. Taste the soup and adjust the seasoning if necessary. You can add more salt or pepper to taste.
