Preparation

    Prepare the Vegetables

    Dice the carrots, celery, onion, and potatoes into small, even pieces. Mince the garlic and chop the spinach.

Cooking

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onions, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are softened.

    Add Garlic

    Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Combine Broth and Water

    Pour in the vegetable broth and water. Stir to combine.

    Add Potatoes and Seasonings

    Add the diced potatoes, salt, black pepper, thyme, and bay leaves to the pot. Bring the mixture to a boil.

    Simmer the Soup

    Once boiling, reduce the heat to low and let the soup simmer for 20 minutes, or until the potatoes are tender.

    Stir in the chopped spinach and cook for an additional 5 minutes, until wilted.

    Taste the soup and adjust seasonings if necessary. Remove the bay leaves before serving.
