Filling Preparation

    Cook the Protein

    In a skillet over medium heat, cook the fiesta chicken or seasoned ground beef until fully cooked (internal temperature of 165°F). If using chicken, shred it after cooking.

    Sauté the Vegetables

    In the same skillet, add roasted onions and bell peppers. Sauté for about 5 minutes until they are tender and slightly caramelized.

    Combine Ingredients

    Mix the cooked protein with sautéed vegetables in the skillet. Stir in the three-cheese blend until melted and combined, about 2-3 minutes.

Quesadilla Assembly

    Prepare the Tortillas

    Spread a small amount of olive oil on one side of each flour tortilla.

    Fill the Quesadilla

    Place one tortilla (oil side down) in a large skillet over medium heat. Add a generous portion of the filling mixture on one half of the tortilla. Fold the other half over the filling.

    Cook the Quesadilla

    Cook for 3-4 minutes on each side or until the tortilla is golden brown and the cheese is melted. Repeat the process for the remaining tortillas.

Serving

    Slice and Serve

    Cut each quesadilla into wedges and serve hot with salsa, sour cream, guacamole, and fresh jalapeños on the side.
