    Prepare the Yeast

    In a bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5 minutes until it becomes frothy.

    Make the Dough

    In a large mixing bowl, combine the flour and salt. Pour the yeast mixture into the flour, then mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.

    Let the Dough Rise

    Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape the Pretzel Bites

    Preheat the oven to 425°F (220°C). Once the dough has risen, punch it down and divide it into small pieces. Roll each piece into a rope and cut it into bite-sized pieces.

    Boil the Pretzel Bites

    In a large pot, bring 10 cups of water to a boil and add the baking soda. Drop the pretzel bites in batches into the boiling water for about 30 seconds each. Remove with a slotted spoon and place on a greased baking sheet.

    Bake the Pretzel Bites

    Brush the pretzel bites with melted butter and sprinkle with coarse sea salt. Bake in the preheated oven for 12-15 minutes, until golden brown.

Jalapeno Cheese Sauce

    Make the Roux

    In a saucepan over medium heat, melt 2 tablespoons of butter. Once melted, whisk in 2 tablespoons of flour and cook for about 1 minute until bubbly.

    Add Milk

    Slowly whisk in 1 cup of milk, stirring continuously until the mixture thickens, about 3-5 minutes.

    Add Cheese and Spices

    Stir in 1 cup of shredded cheddar cheese until melted and smooth. Add the diced jalapeno peppers, salt, and ground black pepper. Mix well and remove from heat.
