Preparation of Tortilla Chips

    Prepare Chips

    Spread the tri-color tortilla chips evenly on a large baking sheet. Preheat the oven to 350°F (175°C) and bake for about 5-7 minutes or until crispy.

Cheese Sauce

    Make Jalapeño Cheese Sauce

    In a saucepan over medium heat, melt the butter. Stir in the flour and cook for 1-2 minutes until bubbly. Gradually whisk in the milk, stirring constantly until the mixture thickens.

    Add Cheese and Jalapeños

    Remove from heat and stir in the shredded cheddar cheese, chopped jalapeños, cayenne pepper, and salt until the cheese is fully melted and smooth.

Pico de Gallo

    Prepare Pico de Gallo

    In a mixing bowl, combine diced tomatoes, red onion, cilantro, lime juice, and salt. Stir well and set aside to let the flavors meld.

Assembly

    Assemble Nachos

    On a large serving platter, layer the crispy tortilla chips. Drizzle the jalapeño cheese sauce generously over the chips, followed by spoonfuls of pico de gallo, fresh sliced jalapeños, sour cream, guacamole, and salsa.

    If desired, add the fiesta chicken, seasoned ground beef, or pulled pork on top of the nachos.
