Beef Preparation

    Sear the Chuck Roast

    In a large skillet over medium-high heat, sear the chuck roast on all sides until browned (about 3-4 minutes per side).

    Slow Cook the Roast

    Transfer the seared roast to a slow cooker. Add beef broth, sliced onion, minced garlic, Worcestershire sauce, salt, black pepper, and Italian seasoning. Cover and cook on low for 8 hours or until the meat is tender.

Sandwich Assembly

    Prepare the Rolls

    Once the beef is done cooking, carefully remove it from the slow cooker and let it rest for a few minutes before slicing thinly against the grain.

    Assemble the Sandwiches

    Slice the hoagie rolls and layer the sliced beef inside. Top with shredded mozzarella cheese and a sprinkle of chopped parsley.

    Melt the Cheese

    Place the assembled sandwiches in a preheated oven at 350°F (175°C) for about 5-7 minutes or until the cheese is melted and bubbly.

Au Jus Preparation

    Prepare the Au Jus

    While the sandwiches are melting, strain the liquid from the slow cooker into a saucepan and heat over medium heat until warm. This will serve as the au jus for dipping.
