Prepare the Chicken
In a small bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Rub this mixture all over the chicken breasts.

Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and let it drain on paper towels.

Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Grill the chicken breasts for 6-7 minutes on each side or until fully cooked (internal temperature of 165°F). During the last minute of grilling, place a slice of pepper jack cheese on each chicken breast to melt.

Prepare the Vegetables
Wash and dry the lettuce. Slice the tomato into rounds. Prepare the guacamole if not using store-bought.
Assembly

Assemble the Sandwiches
Slice the hoagie rolls open lengthwise. Spread a generous amount of chipotle mayo inside each roll. Place the grilled chicken with melted cheese on the bottom half of each roll.

Add Toppings
Layer the crispy bacon, guacamole, lettuce, and tomato on top of the chicken. Close the sandwich with the top half of the hoagie roll.

Serve
Cut the sandwiches in half if desired and serve immediately with a side of chips or salad.
