Preparing Chicken Strips

Bread the Chicken
Cut the chicken breasts into strips. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt and pepper. Dip each chicken strip first in flour, then in eggs, and finally in breadcrumbs.

Fry the Chicken
In a deep skillet or fryer, heat the cooking oil over medium-high heat. Once hot, carefully add the breaded chicken strips and fry until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.
Making Buffalo Sauce

Prepare the Sauce
In a small saucepan over medium heat, melt the butter. Once melted, add the hot sauce and stir to combine. Heat until warmed through, then remove from heat.
Assembling the Wrap

Toss Chicken in Sauce
Place the fried chicken strips in a large bowl, pour the buffalo sauce over them, and toss to coat evenly.

Build the Wrap
On each tortilla, layer a handful of lettuce, diced tomatoes, buffalo chicken strips, and a generous sprinkle of cheddar jack cheese.

Roll and Serve
Fold in the sides of the tortilla, then roll it up tightly from the bottom. Cut in half if desired, and serve immediately.
