Cook the Bacon
In a large skillet over medium heat, cook the smoked bacon slices until crispy, about 5-7 minutes. Flip the bacon halfway through to ensure even cooking. Once done, place the cooked bacon on a paper towel-lined plate to drain excess grease.

Prepare the Vegetables
While the bacon is cooking, wash and dry the romaine lettuce. Tear the lettuce leaves into bite-sized pieces. Slice the medium tomatoes into thick slices.

Toast the Bread
Toast the slices of multigrain bread in a toaster or on a grill until golden brown and crispy, about 3-4 minutes.

Build the Sandwich
On one slice of toasted multigrain bread, spread a generous layer of chipotle mayo. Layer on 4 slices of crispy bacon, followed by a handful of romaine lettuce and 2 slices of tomato. Top with another slice of toasted bread and repeat the layering process with chipotle mayo, bacon, lettuce, and tomato, finishing with a final slice of toasted bread.

Cut and Serve
Using a sharp knife, cut the sandwich into quarters for easy handling. Serve immediately with extra chipotle mayo on the side if desired.
