Shrimp & marinade

Finishing & garnish

Method

Shrimp & marinade

  1. 1

    Prepare shrimp

Rinse the shrimp under cold water and pat dry thoroughly with paper towels. If not already done, peel and devein the shrimp, leaving tails on or off as preferred.

  2. 2

    Make marinade

In a medium bowl whisk together olive oil, lemon juice, minced garlic, smoked paprika, kosher salt, black pepper, and red pepper flakes (if using) until combined.

  3. 3

    Marinate

Add the shrimp to the bowl and toss until each piece is evenly coated. Cover and refrigerate for 15–30 minutes. Do not marinate much longer than 30 minutes — the acid in the lemon will begin to firm the shrimp too much.

Cook & finish

  1. 4

    Preheat pan

Heat a large skillet over medium-high heat until hot, about 2 minutes. Add a small drizzle of oil if your skillet is not nonstick (1 teaspoon).

  2. 5

    Sear shrimp

Add the marinated shrimp to the hot skillet in a single layer (work in two batches if needed to avoid crowding). Cook without moving for 1–1½ minutes, until edges start to turn opaque and golden. Flip and cook the other side 1–1½ minutes more. Shrimp are done when they are opaque and just firm; total cook time per batch is about 2–3 minutes depending on size.

  3. 6

    Add butter & herbs

Reduce heat to medium, add the unsalted butter to the pan and swirl to melt. Toss the shrimp in the butter for 20–30 seconds to coat and glaze. Remove from heat and stir in chopped parsley.

  4. 7

    Serve

Transfer shrimp to a serving plate, squeeze fresh lemon wedges over the top to taste, and serve immediately. Use leftover pan juices as a sauce over rice, pasta, or crusty bread if desired.
