Grilled Chicken

Prepare marinade
In a shallow bowl or zip-top bag combine 2 tbs olive oil, minced garlic, lemon juice, dried oregano, paprika, salt, and black pepper. Whisk or shake to combine.

Marinate chicken
Pound chicken breasts to even thickness (about 1/2 inch) if needed. Add chicken to the marinade, coat thoroughly, and refrigerate for at least 20 minutes and up to 2 hours.

Preheat grill or grill pan
Preheat an outdoor grill or stovetop grill pan to medium-high heat (about 400°F / 200°C). Oil the grates or lightly brush pan with oil to prevent sticking.

Grill chicken
Remove excess marinade and place chicken on the hot grill. Cook 4–6 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C) and juices run clear. Avoid pressing the chicken while grilling.

Rest chicken
Transfer chicken to a cutting board and let rest 5 minutes before slicing into strips or medallions. Resting preserves juices.
Creamy Pasta

Cook pasta
Bring a large pot of salted water to a boil. Add 12 oz pasta and cook according to package directions until al dente. Reserve 1/2 cup of pasta cooking water, then drain pasta and set aside.

Sauté aromatics
While the pasta cooks, heat 1 tbs olive oil and 2 tbs butter in a large skillet over medium heat. Add the finely chopped shallot and sauté 2–3 minutes until softened. Add 2 tsp minced garlic and cook 30 seconds until fragrant.

Make roux
Sprinkle 1 tbs flour over the aromatics and stir for 1 minute to cook the flour, forming a light roux.

Add liquids
Slowly whisk in 1 cup chicken broth until smooth, then add 1 cup heavy cream. Bring to a gentle simmer while stirring. Simmer 2–3 minutes until sauce slightly thickens.

Finish sauce
Stir in 3 tbs grated Parmesan cheese, 1 tsp salt, 1 tsp black pepper, and 1/4 tsp red pepper flakes. Taste and adjust seasoning. If sauce is too thick, add up to reserved pasta water, 1–2 tbs at a time, until desired consistency.

Combine pasta and sauce
Add drained pasta to the skillet and toss to coat thoroughly in the creamy sauce over low heat for 1–2 minutes so flavors meld.

Plate and garnish
Divide creamy pasta among 4 plates or bowls. Top each portion with sliced grilled chicken. Sprinkle with chopped fresh parsley and extra grated Parmesan if desired. Serve immediately.
