    Prepare the Vegetables

    Begin by rinsing the Padron peppers, pole beans, and zucchini. Slice the zucchini into thin rounds and trim the ends of the pole beans.

    Blister the Padron Peppers

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the Padron peppers and cook for about 3-5 minutes, turning occasionally until they are blistered and slightly charred. Season with salt and pepper to taste, then remove from the skillet and set aside.

    Cook the Zucchini and Beans

    In the same skillet, add another tablespoon of olive oil. Add the sliced zucchini and pole beans. Sauté for about 5-7 minutes until the vegetables are tender and slightly caramelized. Season with salt and pepper.

    Add Sweet Corn

    Stir in the sweet corn and cook for an additional 3-4 minutes until heated through.

    Combine Ingredients

    Return the blistered Padron peppers to the skillet and mix everything together gently. Drizzle with chili oil and toss to combine.

    Remove from heat, sprinkle with chopped cilantro, and adjust seasoning if necessary. Serve warm.
