Method

Pork Confit Preparation

  1. 1

    Prepare the Pork

Season the pork shoulder with salt, black pepper, crushed garlic, and thyme. Place in a baking dish and cover with olive oil. Cover with foil and bake at 250°F (120°C) for about 4 hours, or until tender.

  2. 2

    Shred the Pork

Once cooked, remove the pork from the oil and let it cool slightly. Shred the pork into bite-sized pieces.

Parmesan Aioli Preparation

  1. 3

    Make the Aioli

In a bowl, combine mayonnaise, grated Parmesan, minced garlic, lemon juice, salt, and black pepper. Mix until smooth and set aside.

Hollandaise Sauce Preparation

  1. 4

    Prepare the Hollandaise

In a heatproof bowl, whisk together egg yolks and lemon juice. Place over a pot of simmering water and whisk until thickened. Slowly drizzle in melted butter while whisking continuously until emulsified. Season with salt and cayenne pepper.

Assembly

  1. 5

    Toast the English Muffins

Toast the split English muffins until golden brown.

  2. 6

    Assemble the Benedict

On each muffin half, layer shredded pork, a slice of red onion, and a generous dollop of parmesan aioli. Top with a poached egg, drizzle with hollandaise sauce, and garnish with pickled Fresno peppers.

  3. 7

    Serve

Serve with your choice of creamy cheddar grits, breakfast potatoes, or a simple salad.
