Prepare the Biscuits

Make the Biscuit Dough
Preheat your oven to 450°F (232°C). In a large bowl, mix flour, baking powder, baking soda, and salt together. Cut in butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined.

Cut and Bake
Turn the dough onto a floured surface, knead gently, and pat to 1-inch thickness. Cut out biscuits with a floured cutter. Place on an ungreased baking sheet and bake for 12-15 minutes until golden brown.
Prepare the Sausage Gravy

Cook the Sausage
In a skillet over medium heat, cook the sausage until browned. Break it apart as it cooks.

Make the Gravy
Sprinkle the flour over the cooked sausage and stir to combine. Gradually add in the milk, stirring constantly until the gravy thickens. Season with salt, black pepper, and red pepper flakes to taste.

Serve
Split the baked biscuits open-faced and top with sausage gravy. Add crispy bacon if desired. Optionally, fry or scramble eggs and serve on the side or on top.
